A roundup of the best healthy pumpkin recipes on the blog! Savory, sweet, for breakfast, in soup, and desserts! Oh, plus a love letter. To pumpkin. Naturally 😉

Dear Pumpkin,
The world is better because you are in it. I am an October baby, so your orange grandeur has always been a symbol of my favorite month of the year, October. My birthday cake has been and always will be, a pumpkin cake. I don’t ever want that to change. You have been with me since the beginning and I promise you will be with me till the end.
I am starting a campaign to extend your season, you really should be enjoyed for many many months because your glory is worthy of more than just 31 days.
Not a lot of people know that you are so full of nutrients, every little bit of you including your seeds!
Just one cup of your orange flesh provides 200% the RDA of vitamin A, which is fantastic for eyesight. So basically pumpkin, thanks for helping me see.
You are also an excellent source of fiber which helps me stay full longer and consume less unsupportive foods. I personally think it would be a great tradition to send kiddos off into the trick or treating night with a lot of pumpkin in their bellies, this way that stinky Halloween candy won’t be so dang appealing! Don’t you think that’s a great idea pumpkin?
Your seeds are great for heart health, prostate health, and cancer protection. Best of all when I eat pumpkin seeds I feel happier! Thanks to the amino acid tryptophan that your seeds contain.
You are the symbol of a season, and not a lot of other foods could say that. You are fall. You are joy and fun. You are an art project and a pie! You make soups and stews and even tacos better. You are food, but so much more.
I love you forever and ever,
Abra
