Pumpkin Garlic Vinaigrette

This post may contain affiliate links.

Hey, gorgeous fall salads you are getting a major upgrade with this pumpkin salad dressing that is as gorgeous as it is delicious. This pumpkin garlic vinaigrette uses real pumpkin, lots of garlic, and just enough acid and salt to make fall produce happy. This is not a sweet salad dressing, it is savory and garlicky and pumpkin-ey and oh so delicious!

Pumpkin Garlic Vinaigrette

Try this dressing on this fall harvest salad or this farro butternut squash salad.

Adding pumpkin to salad dressing is one of my favorite culinary discoveries to date. Rich earthy creamy, and naturally sweet pumpkin is the perfect addition to a zippy vinaigrette.

You should know, right out of the gate that this is not a sweet salad dressing. I am on a CELEBRATE SAVORY PUMPKIN campaign this year.

Salt, acid, garlic, dijon mustard bring out the rich savory goodness of pumpkin, drizzle on seasonal greens and oh my pumpkin, we have a winner!

Pumpkin Garlic Vinaigrette

INGREDIENTS

  • Pumpkin Puree – please make sure you are using pure pumpkin, not pumpkin pie mix. You can use fresh mashed pumpkin or canned pumpkin.
  • Dijon Mustard
  • Fresh Garlic
  • ACV – Apple Cider Vinegar
  • Extra Virgin Olive Oil
  • Fresh Lemon Juice
  • Salt and Pepper

TOOLS

  • Salad dressing shaker or a bowl and a whisk

Use good quality olive oil – Organic, First-Cold Pressed, Extra Virgin Olive Oil. I like mine grassy and peppery, and this will make a big difference in the flavor of your dressing.
