Hello, sunshine! April is here and with it comes the absolute promise of fresh produce, flowers, and all things spring. In this month's edition of “what's in season” I'll be sharing healthy seasonal recipes for breakfast (including wonderful Easter brunch ideas!), healthy lunches, dinners, and sides and sweet treats.
“April, dressed in all his trim, hath put a spirit of youth in everything” – William Shakespeare
I spent the day in the yard yesterday soaking up some early spring sunshine, preparing the garden, searching for little signs of growth, checking on my garlic (a few buds! I may have succesfully planted garlic!) and then woke up this morning to the ground covered in snow.
Early April is a tease, but I know that we are heading into real spring, and with “real spring” comes spring vegetables!
WHAT'S IN SEASON IN APRIL?
This will depend on the region of the world you live in, naturally. Here in the northeastern United States we may see some fresh produce later in the month.
Winter citrus is winding down this month, so get your fill in before its all gone! Look for seasonal asparagus, artichokes, snow peas, and the first of the seasons sugar snap peas and fresh english peas (later this month and into next month).
We may see some early spring strawberries, cherries, and rhubarb (I'll keep you posted, I should have rhubarb plants in my garden but I fear Jordan chopped most of it down).
Fill your market bags with these seasonal goodies:
- Asparagus
- Artichokes
- Carrots
- Beets
- Cauliflower
- Citrus
- Kale
I hope you LOVE these spring inspired healthy recipes, perfect for Easter and any spring breakfast, lunch, dinner, snack or dessert!
