A delicious collection of your favorite new healthy recipes of 2018.
In an effort to slow down the bubbling drive inside of me to forge ahead with huge plans for 2019, I want to take some time to acknowledge the deliciousness that happened in 2018.
I loved spending time going back through the recipes of 2018 and analyzing which ones you loved, with a capital L! These are the top 18 winners; the most shared, visited, made, commented on, and loved recipes of 2018.
From healthy meal prep recipes (that kept me fueled through many lunches) to incredible nourishing soups. Special recipes that were inspired by my travels (I must admit it has warmed my heart the most to see the overwhelmingly positive response to my travel inspired recipes) to putting turmeric in just about everything (#TurmericBoss). Instant pot recipes that swept Pinterest, to naturally pink colored food (thank you beets). 2018 was certainly a healthy and delicious year and I loved creating every one of these recipes for you.
Thank you a billion trillion for supporting me and this blog. For every recipe you make, comment on, or share I am forever grateful. I have serious deliciousness coming your way in 2019, including more healthy low-alcohol cocktails and mocktails (a request from so many readers!), but when you have a moment would you fill out this 1 minutes survey? It is so important to me that I create recipes that you want. Are you looking for more meal prep? Quick dinners? Healthy breakfast? Healthy snack ideas? Let me know! Any blog requests, recipe requests, or wellness/nutrition info you are looking for? I am all ears!
Wishing you a glorious new year! And now here are YOUR favorite 18 recipes from 2018 (in no particular order).
“My husband and I made this delicious polenta recipe tonight. We loved it!! We are a little hard to please with Italian dishes because having lived in Italy for seven years we have had the best. We were thrilled to discover that polenta in the Instant Pot is very easy!! We own the larger IP which is more likely to give a burn notice but it did not happen. We followed the directions given and used room-temperature water. We served it with a homemade tomato sauce and Italian sausage. If you like polenta but do not enjoy the constant stirring, then this recipe is for you!!” – Terri
“My first taste of garlic soup was in the albergue at San Juan de Ortega. It was, and hopefully still is, the tradition to bring all peregrinos staying in the old monastery into the refectory after Mass, to share in the big urn of soup. The monastery, with its thick stone walls, tends to be cold and the soup is the perfect antidote.
Yours is probably the closest I have found to the San Juan recipe – Thank you. Liam”
“Thank you so much!! We were on holidays in Iceland a few months ago. And I still remember the taste of fish soup. It's amazing. I don't even eat seafood. But I fell in love at the moment when I first tried it in Reykjavik. And this recipe is very close to that soup that I had in Iceland. It brings so many good memories. Thank you so much for this recipe!” – Kamile
