Pasta is serious business in our house. We split our time between the Catskills and Tuscany, and over the years I’ve become deeply committed to honoring the beauty of authentic Italian pasta—simple ingredients, thoughtful technique, and letting each component shine. And then there’s my husband, affectionately nicknamed Doppio (if you know, you know), who has perfected several classic pasta dishes, and shares the technique behind the genius in several of these recipes.
