Zucchini Leek Soup
Ingredients
For the soup
- 2 large leeks sliced and washed well
- 2 tbsp salted butter
- 2 large zucchini about 6 cups, chopped into large piece
- 4 cups good-quality chicken stock (or vegetable stock)

- ¼ tsp ground black pepper
- 2 tbsp chopped chives
Homemade Sourdough Croutons (optional)
- 2 cups sourdough bread cut into cubes
- 1 tbsp olive oil

- pinch ground black pepper
Instructions
Make the soup
- Sauté the leeks. In a large soup pot, melt the butter over medium heat. Add the sliced leeks and cook for 5–7 minutes, stirring occasionally, until soft and fragrant but not browned.
- Add the zucchini. Stir in the chopped zucchini and cook for 2–3 minutes to lightly soften.
- Add stock and simmer. Pour in the chicken or vegetable stock. Bring to a gentle simmer and cook for 10–12 minutes, or until the zucchini is very tender.
- Blend until smooth. Using an immersion blender (or carefully transferring to a blender), blend the soup until smooth and silky.
- Season and finish. Stir in the salt and black pepper. Taste and adjust seasoning as needed.
- Serve. Ladle into bowls and finish with chopped chives and a handful of sourdough croutons if using.
