Ingredients
  • 2 tbsp olive oil
  • 1 small onion diced
  • 12 ounces frozen cauliflower rice or one medium head of cauliflower
  • 1 1/2 cups marinara sauce (I used Rao's marinara, my favorite)
  • 1/2 cup kalamata olives
  • 2 tbsp capers
  • pinch crushed red pepper
  • fresh basil optional
  • grated parmesan cheese optional
Instructions
  1. Heat a large skillet over medium heat. Add olive oil, onions, and crushed red pepper. Saute for 3-4 minutes or until soft and translucent. 

  2. Add cauliflower rice to skillet, stir well for 1 minute. Add marinara sauce, olives, and capers. Reduce heat to low, cover pan and allow to simmer for 4-5 minutes or until cauliflower is heated through.

  3. Serve with fresh basil and grated parmesan cheese (both optional)
