1/4cupfresh herbsmint, fennel fronds, tarragon, dill, parsley, chives (you can use one type of herb or several)
1/4tspsea salt and black pepper
Whipped Feta
1cupcottage cheese
2tbspfeta cheese
1tspfeta brine
Instructions
Chop asparagus and sugar snap peas into thirds. heat a large skillet over medium heat add olive oil and veggies. Saute for 3-4 minutes until veggies are just beginning to cook but still retain crunch and freshness. Season with salt and pepper and crushed red pepper. Remove from heat and add about 1/4 tsp of lemon zest.
While veggies are cooking prepare the whipped feta by adding cottage cheese, feta, and feta brine to a food processor and whipping until creamy and cloud like. Add a bit of crushed black pepper and set aside.
Assemble by spreading the whipped feta cloud on a plate and topping with veggies. Add fresh arugula, herbs, a squeeze of lemon juice and more lemon zest. Finish with flaky sea salt.

How to Destring Sugar Snap PeasMost sugar snap peas contain tough strings that are not pleasant to eat. If you happen upon stringless varieties the prep is certainly easier, if not here is the best way to destring a sugar snap pea:Snap peas have 2 strings that run along the top seam or the concave portion of the pod. To find the top seam place the pea pod on your cutting board so it looks like a smile, the strings will be at the top bit that dips down. Use a small pairing knife to make a slit on the underside of the pod without removing the tail piece entirely. Use the dangling tail piece like a zipper and pull across the pod in the opposite direction to remove the string.
