1tablespoonvegan mayonnaise, or high quality mayonnaise
1/2teaspoonherbs de provence,or any dry spices you like, this is a blend of gorgeous provencal herbs like lavender, rosemary, thyme, oregano, basil and fennel
Instructions
Preheat oven to 450
Slice sweet potatoes into fry shapes NOTE: I usually like to keep the skin on, but feel free to peel if you’d like
In a large bowl toss sweet potatoes with olive oil (first) and dry spices
In a single layer (this part is VERY IMPORTANT) place sweet potato fries on a large baking sheet
Bake in oven for 15 minutes, take out of oven, flip fries and rotate baking sheet
Bake for additional 15 minutes
