This recipe for cold soba noodles with a ginger orange tahini sauce takes about 10 minutes to prepare. Quick, easy, and delicious.

  • 8 ounces Soba Noodles
  • 1 bunch swiss chard
  • 1 carrot shaved into ribbons
Tahini Sauce
  • 1/4 cup tahini
  • 1 garlic clove crushed
  • 1 inch ginger grated
  • 2 tbsp coconut aminos or soy sauce
  • 1 tsp rice vinegar
  • 1/2 orange juiced
  • 1 tbsp water
  • sesame seeds for garnish
  1. Prepare the Swiss chard by removing the bottom 2-3 inches of stem, dicing the remaining stem and chopping the leaves.
  2. Place a large pot of water on the stove to boil. Boil soba noodles according to package instructions, in the last 4 minutes of cooking add swiss chard to boiling water. When noodles are al dente strain noodles and swiss chard into a colander. Rinse well with cold water.
  3. Prepare the dressing by whisking together all ingredients until well combined.
  4. In a large bowl combine noodles, carrot ribbons, and dressing. Toss well to combine. Eat immediately or store in the fridge for up to 4 days.
