How to pit a mangoA mango has an oblong pit in the center of the fruit. The best way to work with a mango is to use your knife to cut away a slab of flesh on either side of the pit. Hold your mango upright and point your knife down as you begin to cut the fruit. Imagine the pit in the middle and allow you knife to skim in front of it to release a slice of fruit, Place the mango fruit side up on a cutting board and mark a grid or checkerboard on the fruit without piercing your knife through the other side. Then spoon out the squares that you have created. Repeat with the slab of mango from the other side.
