A delicious blended baked oatmeal recipe with a swirl of blueberries and cream has the flavor of hearty oatmeal but eats like a warm spoon muffin because the oats are whizzed in a blender till smooth. Jam packed with wholesome goodness from chia seeds, maple syrup, and yogurt, this swoon worthy breakfast is a perfect treat for one but can be easily doubled for two.
Add all ingredients, except blueberries, to a blender and blend until smooth.
Prepare an 8oz oven-safe ramekin by spraying with coconut oil or cooking spray (I used a Staub mini cocotte 8oz/.25 quart size)
Pour in the blended mixture. Smooth the top of the batter with the back of a spoon. Place blueberries on top then swirl with a utensil to incorporate throughout the mixture.
Bake for 40 minutes, or until a toothpick inserted into the middle comes out clean. Remove from the oven and allow to cool before eating.
Top with a scoop of yogurt, and a drizzle of maple syrup.
Notes
Blueberry Substitutes:The fruit in this recipe can easily be swapped for other favorites. Peaches or raspberries would be lovely in this. I would cut the peaches into smaller chunks so that you can disperse the fruit throughout the batter.
