Easy and nourishing beet sumac hummus.
can of chickpeas, drained
roasted beets*see note for how to roast your own or use a packaged roasted beet*
fresh lemon juice
Combine all ingredients in a food processor, process until smooth. If too thick add a bit of olive oil, or the liquid from the chickpea can.
Serve with veggies or pita chips. Sprinkle additional sumac on top and a drizzle of olive oil.
