Heirloom Tomato Salad with Avocado and Fresh Peaches
A fresh heirloom tomato salad with juicy sweet peaches, creamy avocado, and fresh herbs. This healthy, simple salad is the very representation of savoring the final weeks of summer using only seasonal local produce.
Slice tomatoes, avocado, and peaches, and arrange on a platter.
Roll leaves of basil and mint together like a tight cigar and slice into ribbons. Scatter the ribbons on top of the fruit.
Drizzle salad with olive oil, flakey sea salt (maldon is my favorite), and balsamic glaze. I used a white balsamic glaze.
Notes
There are only a few ingredients in this recipe so you want to make sure you are using really ripe and delicious peaches and tomatoes. You can mix up the type of peaches you use, I had white donut peaches and yellow peaches. Nectarines would also be delicious!I love using a variety of different colored and shaped tomatoes, large, cherry, grape tomatoes, etc. Cheese would be a welcome addition to this salad: feta cheese, goat cheese, mozzarella cheese, burrata, or even a generous dollop of fresh ricotta cheese would work quite well.
