mixed berries,
your choice
shaved coconut
Lime Honey Dressing
Instructions
Dressing
Whisk together melted coconut oil, honey, lime juice, and zest (reserve some zest) until well combined. Set aside.
Salad
Prepare quinoa according to directions.
Toss together berries, quinoa, and dressing.
Top with shaved coconut and extra lime zest.
