Ingredients
8-10stalks of rhubarb
1tspfresh lemon juice
1tsplemon zest
1tbspraw honeyplus more for drizzling

1cuppart-skim ricotta cheese
1tbspfreshly torn mint leaves
Instructions
Rhubarb
Slice rhubarb into 2 1/2" pieces. Toss together with honey, lemon zest, and lemon juice. Spread out evenly on a baking sheet and roast in 350° oven for 8 minutes or until just tender. Remove and allow to rest.
Prepare flatbread
Preheat oven to 450°
Allow dough to come to room temperature for 10 minutes. Sprinkle flour on a clean work surface and roll dough into a rectangle to fit your quarter baking sheet. Place in oven for 8-10 minutes or until brown.
Remove from oven, top with 1 cup ricotta cheese, and carefully arrange rhubarb on top of ricotta. Put back in oven for 5 minutes.
Allow to rest for a few minutes then drizzle with honey and fresh mint
Notes
I used store bought pizza dough for this recipe. You can find it either in the frozen section of your market or in the cold case.
