These healthy oven-roasted Greek Chicken Meatballs are bursting with vibrant Mediterranean flavors. Made with ground chicken, feta cheese, fresh herbs, and spices these healthy meatballs are perfect for meal prep or a delicious weeknight dinner.
In a large mixing bowl, combine all ingredients. Mix well using your hands.
Roll into balls, roughly the size of golf balls, (you can use a cookie scoop). In a single layer, place on the parchment-lined baking sheet. Bake Meatballs in the oven for 25 minutes until golden brown around the edges. If checking with a meat thermometer, aim for an internal temperature of 160°.
Remove cooked meatballs from the oven and allow to cool for a little bit.
Serve with homemade tzatziki, plain Greek yogurt, or enjoy unadorned. These are little flavor bombs of their own.

Grate a seedless cucumber on a box grater, hold shredded cucumber in your palm over the sink and squeeze out as much liquid as you can. Combine cucumber with remaining ingredients in a bowl, stir well to combine
