No-bake superfood peanut butter and jelly bites with energy-boosting maca and fiber-rich, chia seeds

  • 1/4 cup

    coconut oil

  • 3/4 cup

    peanut butter

  • 2 tbsp

    maca powder

  • 1 tbsp

    raw honey

  • 3/4 cup strawberry chia jam *see notes
  1. Melt coconut oil and peanut butter together (you can warm slightly in a double boiler or simply microwave for 30 seconds until runny and easy to combine).

  2. Whisk maca and honey into peanut butter mixture.

  3. Prepare a mini muffin tray with paper liners.  

  4. Fill paper liners 1/3 way with peanut butter, freeze for 15 minutes.

  5. Add a small spoonful of strawberry chia jam on top of peanut butter, leaving room for a third layer, and freeze for 15 minutes.

  6. Fill to top with remaining peanut butter mixture, freeze for an additional 15 minutes.

  7. Store treats in the freezer.

You can easily use any jam you like.

Feel free to mix up the fruit that you use as well, chia jam is great with all kinds of berries and stone fruit.
