1/2poundof wild salmon,skinned and cut into 1 inch cubes
1zucchini,cut into large chunks
1/2red onion,cut into large chunks
5small purple potatoes,cut in half
Instructions
Soak bamboo skewers in water for 15 minutes
Boil potatoes until a fork inserted into potato comes out easily (about 5 minutes)
Combine all ingredients for marinade, mix well (start w/ the orange juice and the honey, whisk to break down honey, then add all spices)
Skewer all kebab ingredients, always begin and end with the protein (salmon)
Brush or drizzle marinade on kebabs, allow to sit for a few minutes
Cook on a hot grill pan or outdoor grill. On grill pan it takes 4 minutes per side

Meal Details and Ideas These Kebabs are delicious over a bed of quinoa or steamed greens. They are a great next day lunch, either eat as is or take off the kebab, toss w/ some salad greens and dress lightly w/ olive oil and balsamic vinegar. Kebabs are a great way to stretch protein, this meal cost me about $8.00 and was enough for 2 people (the most expensive part was the salmon) If you haven’t tried Spanish smoked paprika drop everything and run to the store to find some. Especially if you have the “backyard blues.”
