Goat Cheese Creamed Dandelion Greens

Ingredients
1
bunch of dandelion greens,
bottom one inch cut off
1/2
onion,
sliced
1
nectarine,
chopped
2
tablespoons
of goat cheese
1
teaspoon
of extra virgin olive oil
sea salt
black pepper
1
tablespoon
of water
a tiny pinch of stevia
Instructions
Wash dandelion greens and chop into 1″ pieces.
In a large saute pan, over medium low heat, saute the onions in olive oil.
Cook for 5 minutes
Sprinkle with salt and stevia.
Add water to pan, stir until water dissolves continue cooking onions until they are tender, sweet and have taken on a bit of color.
Add dandelion greens and cook for 4 minutes.
Add nectarine and 1 1/2 tbsp of goat cheese, cook until cheese melts.
Season with salt and pepper.
Remove from heat and top with remaining goat cheese.
