In a food processor, fitted with a metal blade attachment, combine walnuts, cashews, and dates. Process until well chopped and fully incorporated. I like to leave mine a little bit chunky for texture.
Add pumpkin puree, pumpkin pie spice, maca, and lucoma. Process until all well incorporated.
Remove from food processor and spread out about ,1/4 inch thick - in the shape of a large square, on a sheet of wax paper. Chill for 30 minutes in fridge.
Remove from fridge and cut into 35 squares - about 1/2" x 1/2"
Store in fridge or freezer (they will keep for 10 days in fridge and several months in freezer
