Homemade Healthy Sloppy Joes, a quick meal updated with lots of veggies and even more flavor.  Your whole family will LOVE this recipe!

  • 1 lb. ground beef
  • 1 large onion
  • 1 large green bell pepper diced
  • 1 large zucchini diced
  • 5 cloves of garlic chopped
  • 2 cups crushed tomato
  • 1 tsp dry mustard powder
  • 2 tbsp coconut palm sugar
  • 2 tbsp worcestershire sauce
  • 1 tsp apple cider vinegar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  1. Preheat oven to 250
  2. In a large (oven safe) saute pan over medium high heat, brown ground beef until no longer pink
  3. If there is a lot of residual fat from browning the beef pour off fat
  4. Add onion, bell pepper, zucchini, and garlic to pan. Saute together with beef for 4 minutes
  5. Add remaining ingredients and stir well to combine. Continue cooking on stove top stirring frequently for 6 minutes.
  6. Remove pan from stove top and lightly tent with tin foil, transfer pan to oven and bake for 20 minutes.
  7. Remove from oven, serve on whole grain bun with pickles. Lots and lots of pickles
