Kale and feta cheese meatloaf muffins are a quick and easy dinner recipe.Creamy feta cheese, yummy kale, and lots of dill in the perfect single serve size.

Ingredients
  • 2 pounds of organic ground white turkey
  • 3 large eggs
  • 1 cup of crumbled feta cheese
  • 2 cups of chopped kale cooked
  • 1/3 cup of scallions thinly sliced
  • 2 tablespoons of fresh dill chopped
  • 1 teaspoon of garlic powder
  • 1/4 teaspoon of each sea salt and pepper
Instructions
  1. Preheat oven to 350, prepare muffin tin with foil liners. Alternatively, you can brush the muffin tin with coconut oil.
  2. In a large bowl combine all ingredients, mixing until well incorporated.

  3. Fill muffin tin with meatloaf mixture.

  4. Bake for 30 minutes, remove from oven and allow to rest for 10 minutes.

  5. Makes 18 muffins. They freeze beautifully!
