Peel and core apples and dice into 1" chunks (if you cut them bigger they will take longer to break down)
Add apples, cranberries and maple syrup to slow cooker. Stir well to combine
Cook on high for 4 hours or low for 8 hours
Transfer to a blender and puree until smooth, alternatively use an immersion blender

This recipe made enough applesauce to fill 3 (32-ounce) mason jars
Serving size is 4 ounces
3 lbs. of apples equals about 12 cups and filled my 6 quart instant pot to right below the fill line (after the cranberries were added). You don't have to be too precise with this recipe, more or less apples will work equally well
If you don't have a slow cooker combine all ingredients in a large pot over medium-low heat and cook until apples are tender
Feel free to add additional spices like cinnamon or star anise. I like this recipe pure and simple
