Artichokes may not be what you think of when you imagine a summer cook out, but in fact they are quite a majestic start to a summer supper. Not only for their culinary prowess but also for some fairly extraordinary health properties that are sure to make artichokes your next “must have” on the party list.
- Artichokes help your body metabolize fat – Well ok! What’s better than a food that helps your body metabolize fat? For centuries artichokes have been used medicinally as a powerful liver tonic. They have a strong effect on the production of bile and fat-digesting enzymes thus stimulating liver function. Artichokes elicit a digestive response and are often a food I recommend to my clients suffering from IBS.
- Artichokes help your body metabolize alcohol – I told you they were the perfect party food! Globe artichokes can protect the liver against the harmful effects of substances like alcohol. Milk Thistle, is a more readily used tonic for the liver in relation to alcohol, but I always try to get healing properties from food before supplements, so why not just serve some artichokes at your next party?
- Artichokes trick your sugar demon brain – This is my favorite part. Artichokes contain a chemical called cynarin. Cynarin changes your perception of sweet. Foods and drinks you consume after you eat an artichoke will be perceived as sweeter than the actually are. This can help to curb sugar cravings, balance blood glucose levels and overall reduce the amount that you are eating.
A great way to prepare artichokes in the summer is to simply grill them. I steam them first (to cut down on the amount of time they are on the grill) then cut them in half, scoop out the choke and rub them with olive oil and a variety of spices. You can watch the step by step video here:
