Yesterday, while at home with my family in Pennsylvania, I went on a long walk with Penelope (my new pup) and my nephew Jonah through the gorgeous country fields behind my Moms' house. In a moment of bravery I took my little pup off leash and let her run free.
Jonah looked at me and said, “Auntie, she loves freedom. Look at her go.”
It was one of those moments when I allowed myself to be truly present.
Freedom, we all love it don't we?
Yet, how often in our life do we allow ourselves to just run free untethered to any worries, or challenges, letting the wind blow through our hair? Can we create more space in our life for moments like these?
Today, on Independence day, I wish for you amazing moments of freedom. Moments when you allow yourself to be truly present, not worried about the future or challenged by the past. If these moments come infrequently or last only for a few seconds, grab tight, let them resonate.
Moments when you are free from criticism and worry, free from negativity and doubt.
When Jonah, Penelope, and I returned from our little adventure I was inspired to whip up a little snack. Red and blue berries, fresh from the farmers market. A little sprinkling of coconut, a squeeze of lime, and nutty gorgeous quinoa.

Berry Quinoa Salad with Lime Honey Dressing
Ingredients
- 1 cup of quinoa
- 1 3/4 cups of water
- mixed berries, your choice
- shaved coconut
Lime Honey Dressing
Instructions
Dressing
- Whisk together melted coconut oil, honey, lime juice, and zest (reserve some zest) until well combined. Set aside.
Salad
- Prepare quinoa according to directions.
- Toss together berries, quinoa, and dressing.
- Top with shaved coconut and extra lime zest.
