I have an affinity for butternut squash, and most other orange flesh veggies. On a chilly fall night I love nothing more than a big plate of sautéed greens and a bowl of something orange.
While we are still in the heart of the season run to your markets grab some squash and whip up one or ALL of these recipes.
Need a few more reasons to dive into butternut squash (or any winter squash really!)
Ok here are a few:
1) Recent studies have shown that certain starch compounds in winter squash have anti-inflammatory, antioxidant, and anti-diabetic as well as insulin regulating properties. I always recommend winter squash as a blood sugar supportive food.
2) Winter squash is an important source of carotenoids, a valuable group of antioxidants that are supportive for cancer prevention.
3) An important source of omega 3 fatty acids. This may come as a surprise because most often we think of fatty fish and seeds as sources of omega 3’s but winter squash (butternut included) contains about 340 milligrams per cup.

A classic reinvented. A bit of butternut squash stirred into the creamy sauce reduces the need for a heavy cream sauce or tons of cheese, but satisfies the desire for delicious. As an added bonus, if your kids are used to that “orange” mac and cheese from a certain blue box then they won’t make a face at the gorgeous squash color of this recipe!
